Zucchini Muffins

Zutaten

  • 1 zucchini roughly grated
  • 100 g parmesan grated
  • 1 tbsp thyme freshly chopped
  • salt | pepper
  • 225 g spelt flour
  • 1 tsp baking powder
  • 1 egg
  • 50 ml olive oil
  • 175 ml milk

Zubereitung

  • Preheat the oven to 190° C (fan 170° C) and grease 8 deepenings of a muffin tin.
  • Mix the flour with the baking powder. While stirring add the egg, olive oil and milk. Stir in the zucchini, the cheese and the thyme and season with salt and pepper.
  • Fill the dough into the greased baking tin and bake the muffins for about 20 minutes until they are golden brown.
