Perfect for some Easter bakery you will find a recipe for carrot-coconut -banana-cupcakes today. This recipe is also from the book The Green Kitchen*, which I recently presented here. Accordingly, it comes without sugar and is also gluten-free. The sweetness you will get by the use of honey and agave syrup. However, in my version I have also replaced the agave syrup with honey.
What I love about these cupcakes is the combination of honey/agave syrup sweetened cream cheese topping and a not so extremely sweet-tasting cake part. On the other side, the man of my choice, who had already tried some cupcakes without topping, slipped out a “Oh what a pity … ” when he had his first bite into a complete cupcake with topping. While he found the version without topping extremely tasty, the finished version was no longer his favourite.
Therefore my advice would be, to serve also some cupcakes without topping. The chances that people will also love them, are quite high :).
